Chicken liver pâté

This healthy version of chicken pâté is one I recommend to so many clients. It is nutrient dense, and amazingly energising as it is an excellent source of zinc, iron and Vitamin B12.

Cooking time: 10 minutes

Best for snacks


Ingredients (serves 4)

250g organic chicken livers

2 tbsp organic butter

1 tbsp olive oil

1 onion

4 mushrooms

3 cloves of garlic

2 tbsp white wine

1 tsp tamari soy sauce

2 tsp fresh thyme

2 tsp fresh parsley


  • Heat the butter and oil in a pan over a low heat. Add the chopped onion, mushrooms and garlic for 3 minutes

  • Add the chicken livers, white wine, tamari and herbs. Cook for 5 minutes, turning regularly to ensure they are cooked through

  • Spoon the mixture into a food processor and blend until smooth

  • Season to taste

  • Transfer to glass container and refrigerate before serving. This will last for up to one week (but not in my house!)

This is delicious used as a dip for raw vegetable sticks, or spread on toast or oat cakes.
